The rearing of the animals plays a very important role for us. Dry Aged

To offer the best experience, we are dry aging selected pieces in our own installations.
Between 1-2 Grad Celsius and about 70% of humidity the meat is brought to the pure essence of its flavor.
The dry aging process up to 6 weeks is made under controlled conditions.
